Chicken breasts we buy in stores are legally free from antibiotics and hormones. Chicken meat and offal are a valuable source of protein, vitamins and minerals. If you want to be even more confident that you are eating a he althy chicken, go for certified or farmed chicken breasts.
Are chicken breasts he althy?On the one hand, we are afraid of hormones and antibiotics in chickens, on the other hand, their consumption in Poland is huge - 27 kg per person per year, and chicken is ahead of only pork in the ranking. Let's take a look at thenutritional values of chicken breastand deny the myths about their production.
Poland is a tycoon in chicken breeding. Most of the meat goes to the Polish market, but a large part is exported - we are the first in poultry exports in Europe. Our domestic production is enough to meet the demand for chickens, and the theory that frozen chickens come to us from China and the United States , it's just a myth.
We can rightly be concerned about the quality of meat from these countries, but we are 100% sure that we will not get one in the store, because chickens from China and the USA do not meet the strict EU standards and are not allowed for sale in the European Union .
In Poland, we buy Polish chickens - even the frozen ones. Only chicken preserves can contain meat from other countries (e.g. Brazil and Thailand), but only if it passes strict control.

So what - you may ask - that chickens are Polish, since they are stuffed with antibiotics and hormones anyway? Well no. The use of hormones while rearing chickens is strictly forbidden by law, while the use of antibiotics must be strictly justified and the animals to which they were administered are withdrawn before slaughter.
The grace period is the time necessary for the complete removal of antibiotic residues from the chicken's body. Among doubts about the purity of meat, there are voices that children grow up prematurely and boys grow breasts from eating chickens.
However, there is no scientific evidence to back this up. 20-30 years ago such a phenomenoncould indeed have happened because the feed was not hormone free, but now the feed must be clean and controlled.
How can we be sure that breeders do not actually use prohibited substances? Quite large, because it does not pay off for them. Pen alties for detecting drugs and hormones are high.
The farm owner has to pay 92 thousand. PLN fine, and in addition, meat from the entire "cast" is not allowed for sale and is subject to disposal. A "throw" in poultry companies is the period from the hatching of the chicks to their sale, and in one roll there may even be more than one hundred thousand chickens.
The journalistic investigations, the results of which could be seen on TV shows, however, show that some producers are dishonest and use illegal drugs to accelerate the growth of chickens and thus increase profit.
How to buy he althy chicken meat?
We can protect ourselves against illegally "driven" chickens. It is best to buy meat with certificates. We then have a guarantee that the chickens were given the correct fodder without antibiotics, and that the meat was packed and transported in the right conditions.
Usually only chicken breasts are marked with certificates, but when buying legs or wings from the same manufacturer, we have the same quality guarantee.

If you do not trust the certificates, you can also buyfarm chicken . It accounts for only 1% of the total chicken production in Poland, but thanks to the trend for a he althy lifestyle, it can be found in stores more and more often.
A farm chicken is a cross between a broiler chicken (a meat chicken that gains weight quickly and is used in industrial rearing) with a farm chicken. It is kept by a dozen or so producers from Podlasie.
Farm chicken lives longer than industrially bred chicken - approx. 8 weeks instead of 5 (farm chicken - approx. 20 weeks). He is vaccinated against coccidiosis - a common disease of chickens - so there is no need to administer antibiotics.
It is fed exclusively with plant-based feed, containing corn, wheat, sunflower meal, GM soybeans, vitamins and minerals. The farm chicken is not kept in the hen house, has the ability to go outside, sees sunlight, is encouraged to move, e.g. by jumping on the perches and straw sheaves.
Thanks to this, its meat has a different taste and structure than in industrial chickens, it contains less fat and hasthinner skin. The price is also quite affordable. A kilogram of a farm costs PLN 12, and a broiler PLN 7.

Chicken meat contains a lot of easily digestible protein, more than pork and beef. It is easy to digest and provides little fat, therefore it is commonly recommended in nutrition, especially for people with a delicate digestive tract, e.g. children and the elderly. Chicken meat is recommended for people who have cholesterol control, cardiovascular problems or are slimming. Significant differences in caloric content and fat content in individual parts of the chicken depend on whether you prepare poultry with or without the skin. The meat itself contains a small amount of fat, and the most fat is found just under the skin. Therefore, for he alth and dietary reasons, it is always worth getting rid of the skin before preparing a dish. Chicken meat provides B vitamins, especially B3 (niacin) and B6 (pyridoxine). Vitamin B3 can be produced in small amounts in the body from tryptophan (an essential amino acid), but its basic source is food. It controls the energy processes in the body, participates in the metabolism of carbohydrates, proteins and fats and in the production of red blood cells, regulates the level of cholesterol, dilates blood vessels, has a positive effect on the nervous system and mental condition, as well as improves the condition of hair and skin . One average-size chicken breast covers the daily requirement for vitamin B6 even in 85%, and for B3 - in over 100%. Vitamin B6 participates in the formation of many enzymes and hormones, as well as hemoglobin - therefore it is responsible for the transport of oxygen in the body. It affects blood pressure, heart function, muscle contractions, increases the body's resistance and improves the functioning of the nervous system. Providing it in adequate amounts relieves the states of apathy, insomnia, depression, improves concentration. It is also recommended in the period of premenstrual tension. When eating chicken meat, we get a lot of minerals, such as zinc, selenium, magnesium and phosphorus. Zinc is found in about 200 enzymes, it is involved in many life processes, incl. bone mineralization, wound healing, immune system function, insulin secretion, blood pressure and heart regulation. One baked chicken leg covers the daily zinc requirement for 70%, and one whole breast for 85% selenium. Selenium is necessary for the proper functioning of many enzymes. It is an element of glutathione peroxidase, i.e. a very strong antioxidant that protects cells against the harmful effects of free radicals, including against the formation of tumors. In addition, it is essential for the proper functioning of the immune system and the thyroid gland, and helps in the fight against depression and fatigue. We know chicken is he althy, but what about giblets - liver, stomachs or hearts? Offal has few supporters. Rather, these parts of the poultry are considered cheap meat substitutes. Nothing could be more wrong. They are as nutritious as meat, they play extremely important functions in the animal's organism, so they must be well nourished during their life - hence they contain large amounts of vitamins and minerals. It is popular to say that the liver stores toxins and components that are harmful to the body. This is not entirely true. The role of the liver is to detoxify, i.e. to neutralize and remove toxic substances from the body, and not to accumulate them. If the liver begins to store harmful substances, it means that their concentration throughout the body is very high and they accumulate in other tissues, including muscles. In stores we can get fresh chicken whole or in parts, by weight or vacuum-packed, as well as various chicken products. When buying chicken, pay attention to its color. It should be light pink and slightly shiny, not yellow and dull. The meat should be firm and elastic - it quickly returns to its original shape under the pressure of a finger. Chicken in parts is better to buy in vacuum packaging than in foil-wrapped trays. With vacuum packs, retailers find it more difficult to "refresh" meat, change best before dates, or increase weight by water injection. Also, make sure the packaging inside is dry.
