Poisoning with edible mushrooms occurs more often than intoxication with poisonous and inedible mushrooms. Professional mushroom pickers have come to such conclusions. Their observations show that non-specific food poisoning occurs not only as a result of improper transport conditions and subsequent storage of mushrooms, but also their improper preparation. Check when edible mushrooms can be harmful.

According to mushroom pickers cooperating with the State Sanitary Inspection, this type of situation occurs because amateur mushroom pickers make basic mistakes. Among them are, among others improper transport and storage of mushrooms or giving mushrooms to children under 8 years of age. When can edible mushrooms cause poisoning?

  • Do not pick OLD or VERY YOUNG mushrooms

According to the data of the State Sanitary Inspection, "nonspecific poisoning may occur after consuming edible mushrooms, when they are overripe, spoiled, old". The choline contained in them, under the influence of bacteria, can transform into a compound similar to muscarine - a strongly-acting toxin, which is found, among others, in in a red toadstool. Also, do not pick young mushrooms, the characteristics of which are not yet properly developed. In this way, it is easy to collect inedible or poisonous mushrooms, which are confusingly similar to edible ones, e.g. a goose can be mistaken for a deadly toadstool.

  • Do not keep the mushrooms in PLASTIC PACKAGING

Mushrooms must not be collected in plastic bags and buckets. As a result of the lack of air access, they become infused, and the protein contained in them curls and decomposes. In this way, the edible mushrooms become poisonous and can cause severe food poisoning. Mushrooms should be collected only in airy wicker baskets or in baskets.

Remember that mushrooms spoil very quickly, so they can stay in the refrigerator for no more than a day. It is worth knowing that the larger the mushroom, the shorter its lifetime. Therefore, do not leave the mushrooms to be processed until the next day. If you have to, store them in the fridge, preferably in the vegetable drawers.

  • Do not serve mushrooms to CHILDREN and OLDER people

Mushrooms should not be given to children under 8 years of age, the elderly and those suffering from digestive system diseases. Mushrooms are difficult to digest because they contain chitin which is not digested by the human stomach. As a result, mushrooms can remain in our stomach for up to 3 days before they enter the intestines.

  • Do not wash your mushrooms with ALCOHOL

The most common cause of food poisoning caused by edible mushrooms is improper preparation. Therefore:

  • do not eat mushrooms raw. It's best to eat them right away, without refrigeration, or process - dry, freeze or make a marinade of them;
  • mushrooms and dishes made from them, do not reheat or freeze them repeatedly;
  • don't wash your mushrooms with alcohol! Certain species of fungi, such as chernozem, have been proven to be poisonous when combined with alcohol. It's all because of coprine - a substance that blocks the breakdown of alcohol in the human body and causes food poisoning that can be fatal.

Edible mushroom poisoning - symptoms

Poisoning by edible mushrooms usually manifests itself with abdominal pain, nausea and vomiting. Initially, it is difficult to say whether the poisoning was caused by edible or poisonous mushrooms, so it is best to see a doctor for observation or gastric lavage.

If you are unfamiliar with mushrooms, give up mushroom picking. Buy mushrooms in the store or from trusted people at marketplaces. Remember to ask for the current certificate issued by a mushroom expert from the County Nutrition Department or the Provincial Sanitary and Epidemiological Station before buying mushrooms on the market. According to the law, the sale of mushrooms without an approval (e.g. by roads) is prohibited.
