When and how to collect pine shoots ? Pine shoots are best harvested at the turn of April and May. They must be light green growths with a brown, sticky shell. Trim them with a secateurs or a very sharp knife.
The juiciest are up to 12 centimeters long. Longer ones will have less juice. The shoots best for syrup and honey will be sticky, so remember to collect them with gloves. In order not to damage the tree, do not collect all the shoots from one pine tree, but choose the juiciest of several trees.
How to make pine syrup - recipe
You need:
- liter jar of young pine shoots (last year's growth)
- sugar
- a little water
Preparation of pine syrup:
1. After picking the young shoots, gently wash them under running water and cut them into centimeter-sized pieces. Another way to make the shoots sap faster is to knead them with a wooden pestle.
2. Then, alternately arrange the shoots and sugar in the jar (sprinkle a layer of shoots 3 cm thick with 4 teaspoons of sugar). Finally, add a little water.
3. Turn the jar on and put it in a sunny place for about a week (in sunny weather) or longer (if it's cloudy and rainy outside).
4. After this time, pour the resulting syrup into a smaller jar. Stored in a cool and dark place, it will not lose its healing properties even for several years.
