In fatty liver, it is recommended to consume mainly cold-pressed vegetable fats, e.g. sunflower oil, soybean oil, and olive oil. Butter can also be found in the patient's menu, but margarines are not recommended. People suffering from non-alcoholic fatty liver should remove foods rich in saturated fatty acids from their diet. They include, among others animal fat (lard) or pork as well as yellow and processed cheeses. In addition, patients should limit the consumption of nuts.

It is not recommended to eat fried products while following the diet. However, if you decide to eat fried foods, fry them in vegetable oils.

You should also mention the soups, which are often made with fatty stocks and bones. They are not recommended for a fatty liver diet. It is also inadvisable to add sour cream and roux to soups, as well as mushrooms. Soups should be made with lean meat stocks.

In this type of diet, complex carbohydrates, i.e. starch, should dominate. It is absorbed slowly without causing a spike in blood sugar levels. The starch supply is converted into glycogen, which the liver needs to maintain a constant blood sugar level between meals and during sleep. In turn, simple carbohydrates, i.e. sugars, are quickly absorbed from the digestive system, and their excess may cause the accumulation of fat in the body, including the liver. For this reason, their consumption should be limited. A particularly inadvisable type of sugar is fructose, i.e. fruit sugar. Therefore, patients are advised to limit fruit consumption to approx. 300 g per day, and to give up fruit juices. Keep in mind that fructose is also an ingredient in honey, jams, fruit yoghurts, and dairy desserts.

The consumption of complex carbohydrates should depend on the weight of the patient. People who are underweight should not limit their consumption. People who are overweight or obese should do the opposite.
