Aronia - preserves. Aronia jam
Jam is a preparation of whole or sliced fruit suspended in semi-coagulated jelly. The preservative factor here is sugar, which combines with the pectin contained in the fruit to form a jelly. It is precisely because of the high sugar content that jams are quite caloric. Of course, you can make the low-sugar ones, but you have to pasteurize them. In addition, they require long cooking, so they usually completely lose their vitamin C. In order to shorten the cooking time and thus retain more vitamin C, gelling preparations with thickening properties can be used. Unfortunately, they contain preservatives and therefore are not recommended. Besides, these types of preparations are not low-calorie. In addition, jams preserve the fiber and minerals contained in the fruit.
