The cut ends of the vegetables should be moist and the shoots shiny and springy. Asparagus comes in three colors - each type has a slightly different taste and requires a different preparation method.
White asparagus is more fibrous than green asparagus, so you need to peel it. So the ones with medium thickness, not thin ones, will work. Green asparagus, on the other hand, is more delicate in taste, while purple asparagus has an intense aroma and is the sweetest.

What can be made with asparagus?
Asparagus is served as a starter or as an addition to the main course. They are used to make soups (usually cream type), omelettes, tarts, casseroles, they are also an effective ingredient of salads.
They go well with hot and cold sauces, which slightly contrast with the mild taste of asparagus, e.g. béchamel, vinaigrette, mustard, herbal, Dutch. It is even enough to pour a little bit of good olive oil on them and sprinkle with lemon juice.
