So these are not juices, but rather drinks.

On the other hand, shop raspberry juices, which contain raspberries, are produced similarly to other fruit juices, i.e. from concentrate. The raspberries they contain are not washed beforehand (because then they could fall apart). The raw material is crushed in a special device, and during this process a solution with enzymes decomposing pectin compounds is added to it.

This is how a pulp is formed, which is heated in the next stages of the process and the juice is pressed from it. During the next several production stages, the juice is added to the previously captured aromatic compounds, as well as clarifying substances (e.g. bentonite). In home conditions, however, it is difficult to squeeze such a juice in order to store it for more than 24 hours (you can of course rub the raspberries through a sieve, but it's better to simply eat them). Recipe for homemade raspberry juice without sugar

Ingredients:

  • A kilogram of fresh raspberries
  • 150 ml of water

Crush the raspberries, pour water, bring the mass to a boil, then rub it through the cloth and pour the resulting juice into the bottles. In order for the juice to survive the winter, it should be pasteurized for about 20 minutes by heating the bottles in a large pot filled with water at a temperature of 85 degrees C.

Raspberry juice can also be made with sugar - although it is less he althy, it is definitely tastier. Then it is no longer a juice, but a syrup. It can be prepared in a pot or in a special juicer.

Recipe for homemade raspberry juice (syrup)

Ingredients:

  • 3 kg of raspberries
  • 1 kg of sugar or other sweeteners (in appropriately reduced proportions)

While preparingraspberries in a pot, sprinkle them with layers of sugar and set aside for two days to release the juice. After this time, pass the contents of the pot through a fine strainer, bring to a boil, then pour into scalded bottles and close. If you have a juicer, things are easier: just put the raspberries in the top pot, and sprinkle sugar over them in layers. Pour 1.5 liters of water into the bottom pot and heat it up, and when the juice starts to form, pour it into the bottles through the tube.
