I used to weigh 75 kg, lost 51 kg, and now weigh 57.5 kg. I will add that I am 177 cm tall. I would like to gain a few more kg to weigh around 60 kg. I don't know how to go about it, what and how much to eat. When I get fat, I am going to introduce physical activity.

You should increase the daily caloric content of your diet and divide it into individual meals. You can replace lean products (milk, cottage cheese, yoghurt) with those with higher fat content. Include fatty meats and fish in your diet. You should consume fruit juices before meals to stimulate the appetite. Your diet should be rich in carbohydrates, the excess of which is converted into adipose tissue. The source of carbohydrates in your case may be bread, cereal, rice, pasta, potatoes. You should introduce a high-calorie diet gradually so that your weight gain is not too rapid.
