The quantity and availability of blueberries in the Augustów Primeval Forest as well as the taste, he alth and technological qualities of the inhabitants of the above-mentioned territories have always used this raw material in the preparation of various dishes and pastries.

Almost every family has developed its own method of producing blueberries, passed down from generation to generation .¹

It's good to know that Olsztyn's jagodzianki and Augustów's jagodzianka are on the list of traditional products.

Jagodzianki have long been baked by the people living in the present Western Masuria (former Prussia) .² Apart from the edible mushrooms, herbs or honey hidden in its resources, the forest also provided aromatic forest fruits, mainly blueberries.

The local people have always recognized their taste qualities and have often used them in the kitchen in many ways, incl. for baking blueberries.

Buns made of yeast dough are also a characteristic baking in eastern Mazovia .³ The tradition of this baking can be found in folk customs in the mid-twentieth century. In the surrounding parishes, it was a tradition to celebrate the so-called indulgences.

On that day, a fair was organized in the parish, which the people celebrated with fun, inviting friends and relatives from other parishes.

It was a tradition to present departing guests with blueberries, because they tolerate transport very well and were a good memory of the pilgrimage fun.

Blueberries can also be made from ready-made confectionery mixes, and have a caloric fruit filling inside, sprinkled with a sweet coating - such caloric "bombs" should be avoided.

Berries should be made of flour, yeast, milk, sugar, eggs and butter, and of course berries, preferably fresh.

You should certainly avoid hermetically packed blueberries, because they contain ingredients that are to extend their shelf life. In addition, some of them are filled not with fresh berries, but e.g. marmalade or preserves.

For example, a hermetically sealed, gluten-free blueberry cake from one of the popular confectioneries has the following ingredients:

Jagodzianki - how to make?

The method of their preparation is not difficult, although time-consuming. First, prepare a yeast dough with the right amount of flour, yeast, milk, sugar, eggs and butter.

Knead the whole thing by adding the ingredients in the right order, and then leave it to rise.

Remember to knead the dough (sprinkle it with flour if necessary) until it starts to move away from your hand. After kneading, the dough is rolled out into a thin cake with a thickness of approx. 5 mm and you can cut discs from it with a glass.

For each one put berries sprinkled with flour and sugar, stick them together, put them on a greased baking sheet and leave them to rise, sprinkle them with protein, sprinkle with sugar and bake.

Blueberry yeast rolls should be baked for about 30 minutes, paying attention to their color, so that they do not overcook.
