Spelled diet - recipe for spelled soup

Ingredients (for 4 servings):

  • 1 cup (200 g) of spelled seeds
  • 1 l vegetable stock
  • 1/4 cubes (50 g) of butter
  • 2 medium onions
  • 3 medium carrots
  • 2 celery stalks
  • 1-2 tbsp lemon juice
  • 150-200 ml cream 18%
  • a bunch of parsley, 1 small fennel
  • spices: s alt, white pepper, 2 pinches of nutmeg

Preparation method:

Rinse the spelled under running water, drain and put into a pot. Then pour warm vegetable broth and set aside overnight. The next day, melt the butter in a pot and sauté the peeled and chopped onion on it. Wash, peel and cut the remaining vegetables. Add them to the glazed onion, sauté and mix. Then put everything into a deep pot, pour the broth with spelled, season with s alt, pepper, nutmeg, lemon juice and chopped fennel. Cook the soup over low heat for about 20-30 minutes. Finally, add the cream.

Spelled diet - recipe for spelled cutlets

Ingredients (for approx. 8 small patties):

  • half a cup of petalsspelled
  • half a cup of whole grain spelled meal
  • 2-3 tablespoons of oatmeal
  • 2-3 medium young carrots
  • 1 onion
  • 2 cloves of garlic
  • spices: s alt, pepper, pinch of nutmeg
  • olive oil

Preparation method:

Put the spelled flakes and semolina into the water, then cook until tender. After cooking, let it cool down. Meanwhile, fry the peeled and chopped onion in the pan. Then grate the carrots, add to the onion and sauté until soft. Season with finely chopped garlic and fry for another 30 seconds. Cool spelled, strain through a sieve and grind in a blender until smooth. Put the spelled into a bowl, add vegetables from the pan, oatmeal, spices and mix thoroughly. Form patties from the finished dough and fry in a pan.

Spelled diet - recipe for spelled muffins

Ingredients (for approx. 4 muffins)

  • less than a glass (150 g) of spelled flour
  • 1/3 cups of cane sugar
  • half a teaspoon of baking powder
  • half a teaspoon of s alt
  • 300 ml of skim milk
  • 3 eggs
  • 1 tablespoon sunflower oil
  • dried fruit: raisins, almonds

Diabetics can replace cane sugar with a small amount of fructose or stevia. On the other hand, people with elevated cholesterol levels are advised to use proteins alone instead of whole eggs.

Preparation method:

Mix all dry ingredients, then add milk, eggs, oil to them and knead the dough thoroughly. Then use it to cover the muffin molds and put them in the preheated oven to 225 degrees Celsius. Bake the muffins for 20 minutes.
