Tom Kerridge, a British obese chef who lost 70 kg shows that it is possible. In his book "The Happiness Diet" he presents 100 original ideas for dishes that release dopamine and allow you to change eating habits to reduce body weight. "I work in an industry full of strong-minded partygoers and have built a reputation as a top-dropper at awards, parties and gatherings. My love of alcohol and late-night food was legendary. But as my birthday approached , I started to think that I needed a change. I couldn't go on living this way. (…) But how, working in a business where it all comes down to delicious, caloric food and no restraint drinking, could I start to make changes and find a diet to lose weight, which would be right for me, "recalls Tom Kerridge, the British chef in his book "Happiness diet. 100 recipes to release dopamine and lose weight."
When Kerridge turned 40, he weighed about 190 kg. In three years he lost 70 kg. He did this thanks to the method of nutrition he created for himself after many months of analyzing his own life and the diets he already knew. His new way of eating is based on the selection of ingredients that release the "pleasure" hormone, i.e. dopamine. It is a key chemical that accompanies nerve signals in our brain's pleasure center. When we experience pleasure, be it from food, laughter, or sex, dopamine is what is produced in our brain. There are studies that show that low levels of it lead to lower motivation, lethargy and apathy, and even depression. Thus, in Kerridge's pantry and refrigerator there are such "dopamine carriers" as, among others, cottage cheese, yoghurt, eggs from free-range hens, fish, watermelons, strawberries, grapes, almonds, beef, lamb, turkey, broccoli, beetroot, green tea and… chocolate.
Kerridge has divided his book into sections where he discusses his diet and presents recipes for soups and broths, hot and cold salads,omelettes and pancakes, minced meat dishes, stews and stews, fried and baked dishes, as well as sweets. The author of the book serves in his book not so much a diet as a selection of his favorite recipes from recent years, and encourages readers to try them out. Stewed beef with horseradish
I changed the carbohydrate-rich potatoes and carrots typical of beef stews into turnips and kohlrabi. These low-carb vegetables have a peppery flavor that works great with fresh, fiery horseradish.
Ingredients:
- vegetable oil for frying
- 1.2 kg of a beef strip, cut into 3 cm pieces
- 2 onions, finely diced
- 4 cm piece of grated ginger
- 2 celery stalks, fiberless, cut into pieces
- 6 bay leaves
- 6-8 rosemary sprigs tied with kitchen thread
- 750 ml beef stock
- 200 g young mushrooms, stemless
- 30 g horseradish, peeled, freshly grated
- 4 turnips, peeled, cut into 3 cm pieces
- 2 kohlrabi, peeled, cut into 3 cm pieces
- 2 tablespoons granulated beef sauce
- possibly 2 tablespoons English mustard
- sea s alt and freshly ground black pepper
1. Place a large ovenproof dish with cover over medium heat and add a thin layer of oil. Season the beef and fry in batches until well browned and crunchy. Don't put too much meat in at once as it will choke instead of frying. Transfer the fried meat to a plate to let it rest. 2. Preheat the oven to 150 degrees C. Turn the heat down under the cookware and add the onion and ginger. Fry gently, stirring occasionally, for about 10-15 minutes, until the onion is tender. Add the celery and cook for another 2-3 minutes, then add the bay leaves and mix. 3. Put the beef back into the bowl along with any juice that has leaked from the meat onto the plate. Pour in the broth and bring to the boil, then add the mushrooms and horseradish. Turn on the heat and season with s alt and pepper. Put the lid on and put in the oven for 2 hours. 4. Take out for a while and add the turnips and kohlrabi. Put it back in the oven without the lid for another hour. The sauce will evaporate and thicken slightly, and the beef will be very soft. If you think the sauce should be thicker, add the granules. 5. Finally, add the mustard and check whether it needs any seasoning. Serve in warmed bowls.

It is mainly about running, which puts a lot of strain on the ankle and knee joints as well as the circulatory system and can be a threat to people with a large body weight.What you need to watch out for!When introducing Tom Kerridge's dishes to your menu, however, remember that they contain a lot of protein and saturated fat, but little carbohydrates. And the so-called diets high protein, high fat and low carbohydrate can be hazardous to he alth in the long term. They should be avoided primarily by people with cardiovascular diseases, e.g. atherosclerosis, ischemic heart disease, arterial hypertension. Too much saturated animal fats contributes to the formation of atherosclerotic plaques that "clog" the blood vessels. High-fat foods that are difficult to digest, force organs such as the liver, pancreas, and intestines to do additional work, so they should not be abused by people, e.g. with irritable bowel syndrome and other digestive system diseases, as well as with all liver diseases, especially non-alcoholic fatty liver disease. On the other hand, eating too much protein not only acidifies the body, but also puts too much strain on the kidneys and liver. The use of such a model of nutrition in the long run may lead to a deficiency of vitamins and microelements.
