All you need to do is modify Christmas recipes and replace some ingredients with those that have a low glycemic index, and thus do not contribute to a sharp rise in blood sugar levels. This can be replaced with rye flour, especially wholemeal flour, the GI of which is half the size and amounts to 45. In turn, sugar can be replaced with xylitol, i.e. sugar from birch bark, whose IG=8. Another alternative is stevia - a natural sweetener obtained from the leaves of stevia.
Diabetes Christmas Eve - Christmas cheesecake for diabetics
Number of servings: 20
Cheese mass:
- 1 kg of ground lean curd (0.50 g fat / 100 g)
- 1 egg
- 4 yolks
- 3 tablespoons of stevia
- sugar-free cream pudding (35 g)
- orange flavor or juice of half an orange
The cheese is best made in a blender. First, grate the eggs, then add cheese, stevia, pudding and flavor or juice. Finally, it is worth trying if the mass is sweet enough.
Cake:
- half a kilo of rye flour (approx. 3 glasses)
- 4 yolks
- 1 and 1/2 tablespoon of stevia
- butter cube (250 g)
- 4 tablespoons of natural yoghurt
- 1 teaspoon baking powder
- 2 tablespoons cocoa
Mix the flour with the stevia, cocoa and baking powder. Then add the butter, egg yolks and knead everything. Divide the finished dough into two parts, wrap it in cling film and put it under the freezer for about 2 hours.
Line the baking tin with baking paper. Then, on a large-mesh grater, grate one part of the dough on the bottom of the tray. Pour the cheese mass onto the dough. Put the coarse-mesh grated dough on top again. So prepared cheesecakebake for 1.5 hours. in an oven preheated to 170 ° C.
Diabetes Christmas Eve - dumplings with cabbage for diabetics
Portions: approx 25 dumplings
Cake:
- 300 g of wholemeal rye flour
- 120 ml warm water
- 1-2 tablespoons olive oil
- large pinch of s alt
Sift the flour into a bowl (or on a pastry board) and add s alt and oil to it. Little by little adding warm water, knead the dough. Put the dough aside for half an hour, and then divide it into 2-3 parts. Roll out each of them to a thickness of about 2 mm, sprinkling with flour from time to time so that the dough does not stick to the board and rolling pin.
Use a glass to cut out circles from the dough. In the center of each of them, put a teaspoon of stuffing, fold it in half and stick the edges together. Put the dumplings in boiling s alted water and cook for about 3 minutes. (until they come to the surface).
Stuffing:
- 0.5 kg of sauerkraut
- 2 large onions diced
- spices: bay leaf, s alt and pepper
Put the cabbage with bay leaf into a tall pot, pour water over it. Simmer until tender (approx. 45 minutes). Glaze the onion in a non-stick pan. Drain the cooled cabbage and chop it. Then add finely chopped onion, a pinch of pepper and s alt to taste and mix thoroughly.
Diabetes Christmas Eve - red borscht for diabetics
Portions: approx. 4-5
- 0.5 beetroot leaven
- 2-3 large beets
- 1/2 celery (around 10 grams)
- 1 parsley
- 5 glasses of water
- spices: bay leaf, allspice, s alt, ground pepper
Wash vegetables, peel them and then cut them into thin slices. Put them into a pot, pour cold water (so that it covers the vegetables) and cook, covered, for about an hour. Filter the borscht, add the beetroot leaven, spices to taste and bring it to a boil again.
Sourdough recipe:
- 1 kg of red beets
- 3 cloves of garlic
- spices: bay leaf and allspice, s alt
- sourdough wholemeal bread crust
Wash the beets, peel them and cut them into thick slices. Peel the garlic and cut into slices. Arrange the beetroot and garlic slices alternately in layers in the jar. Top with the bay leaf, allspice and sprinkle with s alt.
Pour warm water over it and put the bread crust on top. Cover the jar with gauze or a cloth, tie it with string and put it in a warm place for 4 days.
After this time, remove the scum and foam from the top, remove the bread crust and pour the acid into a clean bottle. Close tightly and storein the refrigerator.
