However, it contains the most beta-carotene (6.15-9.02 mg / 100 g) - provitamin A, from which vitamin A is produced in the human body. It is worth knowing that carrots are one of the richest sources of beta-carotene. It can be found ( although not in such amounts) in spinach (3.25-5.60 mg / 100 g) and kale (2.84-43.80 mg / 100 g) - in which beta-carotene is masked by chlorophyll - as well as in pumpkin (2.974 mg / 100 g) and red pepper (2.38-3.25 mg / 100 g).
