Worth knowing

Kumysis a drink made from the fermented milk of mare or, less commonly, donkeys. It contains about 1-3% of alcohol, lactic acid and protein each, up to 2% of fat and a small amount of milk sugar. Alcoholic fermentation is caused by a special species of yeast. It is an excellent and easily digestible nutrient. Already known to the ancient Scythians, since the 12th century it was widespread among the Mongols, Kyrgyz, Yakuts and Tatars. Half a century ago, I drank koumiss in Crimea, where it was sold on the streets in barrel glasses, as did kvass, beer and red wine.
