Truffles are mushrooms that have not only exceptional taste, thanks to which they have been used in the kitchen, but also have he alth benefits. The most expensive mushrooms in the world have potential antiviral, immune-stimulating and rejuvenating effects. What other properties do truffles have? What do they taste like? How to make dishes with truffles?

Trufflesare spherical mushrooms that grow underground. Truffles not only have unique taste qualities, thanks to which they are used in the kitchen, but also have he alth benefits. They were already appreciated by the Romans and Greeks, who also used them as aphrodisiacs. Today, truffles are found in latitudes from Spain through Europe to China, and extend along the meridians from Gotland in Sweden to North Africa. However, the two most important truffle areas are French Périgueux and Italian Piedmont. In Poland, truffles are found on a few sites.

Truffles - nutritional values ​​

Nutritional values ​​of trufflesdepend on the species and the degree of maturity of the harvested fruiting bodies. Truffles contain protein.

Truffles are protected in Poland! This means that they cannot be harvested from natural sites.

In mature fruiting bodies, protein makes up about 20 percent. dry matter and contains many essential amino acids for humans, as well as amino acids which are the source of sulfur - methionine, cysteine ​​.¹ Besides, truffles contain little fat - they constitute approx. dry matter, of which less than 10 percent. are desirable omega-3 fatty acids .¹ They also contain carbohydrates and mineral s alts.

Truffles - like other mushrooms - also contain ergosterol, which is a precursor to vitamin D, which is essential for proper bone structure and structure.

Truffles - he alth properties

Some types of truffles are antiviral and antibacterial. Their alcoholic extracts have been shown to be active against gram-positive bacteria - hay fever, golden staphylococcus and blue oil. Truffles also have potential antioxidant properties that can play an important role in the prevention of inflammatory diseases, cancer, heart disease and theaging.¹ Water extracts from truffles have also been shown to stimulate the immune system. Truffles also have rejuvenating properties, thanks to which they are used in cosmetics, including in anti-aging treatments. Active substances obtained from truffles smooth out wrinkles, brighten the skin and increase its elasticity.

Black truffles work like marijuana

Dogs or pigs are used to search for truffles. When animals find this aromatic mushroom, it has been observed that they trigger euphoria, madness. This phenomenon was examined by scientists from Bio-Medico University in Rome. Black truffles ( Tuber melanosporum ) were found to contain anandamide (AEA), a psychoactive substance that is similar to the tetrahydrocannabinol (THC) found in marijuana .² It has also been shown that more mature truffles contain a higher concentration of this compound than young truffles.

Truffles - use in the kitchen

The most valuable variety of truffles in the world is the white truffle from Piedmont ( Tuber magnatum ), which captivates with its olive-nut-musky scent and … the price, which can reach up to 25,000 PLN per kilogram.

Truffles are very expensive because of their taste and difficulty in finding. Their prices start from 2,000. PLN per kg of summer truffle up to 25,000 PLN per kg of white truffle. This means that one small mushroom can be worth up to PLN 300.

The second most valuable type of truffle is the black truffle ( Tuber melanosporum ), also known as the Périgord and black spore truffle. Its flavor is described as earthy, garlic, olive, and even chocolate, nutty. The summer truffle ( Tuber aestivum ) and whitish truffle ( Tuber borchii ) were also used in the kitchen.

The fruiting bodies are washed with a brush under running water, dried and put into an airtight container together with a product that absorbs moisture, e.g. with rice. The taste and aroma of truffles are so strong that the mushroom does not usually constitute a separate dish, but an addition or seasoning to the dish. Truffles can be combined with:

  • meat, e.g. beef, venison
  • seafood, e.g. St. Jakub
  • eggs (e.g. scrambled eggs, omelette)
  • pasta
  • will also work as an ingredient of stuffing and addition to roasts. They are often served with foie gras

Truffles are always added to a hot dish because the temperature emphasizes its qualities. It is sliced ​​with a special tool, called a truffle mandolin, into very thin slices, just before eating. Paste is also available for sale,butter, creams and truffle oil.
