Proseccois a sparkling wine and its name is derived from the Italian white grapes from which it is made, now also known as Glera.

Prosecco is produced exclusively in selected regions of Northeast Italy. Since 2009, the name Prosecco has been a protected designation of geographical origin, which may be used to label wines produced in only two regions of Italy, Veneto and Friuli Venezia Giulia (Prosecco DOC).

The prosecco produced in the province of Treviso, in the hills between Trevisto and Veneto, Cornuda and Asolo, is known as DOGS prosecco. Wines bearing this designation are considered to be the most prestigious wines in the country.

Prosecco - production

Unlike champagne, Prosecco is produced by the Charmat method, where secondary fermentation takes place in hermetically sealed, pressure stainless steel tanks. This is all to achieve the right balance between taste, aroma, texture and size of the bubbles.

Then the finished sparkling wine is poured into bottles. This method is cheaper than the champagne production method, where the secondary fermentation takes place in the bottles, which is why Prosecco is cheaper than champagne.

The grapes are harvested early to keep the fruit high by hand. Then, the fruit is obtained from the must, to which the selected yeast is added, and thus the primary fermentation process begins, which lasts a maximum of 8-10 days.

Prosecco - types

Prosecco is divided according to the carbon dioxide content into:

  • sparkling (spumante) - the most popular type
  • pearly (frizzante) - semi-sparkling
  • table (tranquillo) - carbon dioxide free, described as a still wine, very rarely produced and exported outside Italy

Prosecco is always white. Pink Prosecco is a blend of Prosecco with a red Raboso strain.

Prosecco spumante and frizzante come in three different versions depending on the amount of sugar in the final product:

  • brut - with a content of up to 12 g of sugar per liter. The most popular prosecco. Usually characterized by citrus aromas. It is best served at 7-9 degrees C. It is perfect as an addition to fish and vegetable dishes, dried hams, cocktail sandwiches.
  • extra dry - with a sugar content of 12 to 17 g per liter. Traditional prosecco, with a delicate, sour taste. Best served at 8-10 degrees C. It is perfect for vegetable soups, seafood, white meat, creamy white cheeses.
  • dry - with a sugar content of 17 to 32 g per liter. Less often produced than brut and extra dry. It is characterized by a spicy, but at the same time delicate flavor, thanks to the combination of citrus fruit with apples and peaches. Best served at 7-8 degrees C with spicy dishes and cakes.

Prosecco is one of the least caloric alcohols, 100 g contains only 75 kcal. For comparison, 100 g of vodka and rum has 231 kcal, 100 g of whiskey - 250 kcal, and 100 g of red wine has 85 kcal.

Prosecco usually takes the form of a dry or semi-dry wine and is similar to champagne, but paler and sweeter. It has a fruity flavor and aroma, which makes it a great combination with s alty snacks, light pasta dishes, seafood and poultry.

Prosecco goes well with delicate tofu, shrimp, white meat, vegetable dishes, pork dishes, fish dishes, creamy cheeses. It also goes well with spicy curries and Asian dishes: Thai and Vietnamese cuisine.
