GyrosandGyros saladare dishes whose nutritional value was first appreciated by the Greeks.Gyrosis a traditional Greek dish, which consists of thin slices of meat roasted on a vertical spit, tomatoes, onions and tzatziki sauce served with pita bread. In turn, the gyros salad is a layered salad, which most often consists of chicken and numerous vegetables - corn, pepper, Chinese cabbage and mayonnaise.
The namegyrosderives from the Greek word γύρος which means to turn. It is pronounced "jiros". Rotating meat on a spit has ancient roots and was very popular on the eastern Mediterranean coast. However, the gyros known in its present form has been produced since the 19th century and was borrowed from the Turks who first began serving thinly sliced meat in the drink in the city of Bursa. Gyros appeared outside Greece as a result of the migration of the indigenous Greek people. He became very popular in the USA, where around 1965 in Chicago, George Apostolou opened the first gyros restaurant, and 9 years later - a factory producing bales of meat for gyros.
Gyros and gyros salad
Gyros is a traditional Greek dish. It is prepared in the form of large bales of meat weighing from 70 to 120 kg placed on a vertical spit, which are slowly rotated around its axis and toasted. After cooking, the meat is cut from top to bottom, making thin slices several centimeters long.
If the meat is not greasy enough, the pieces of meat are put on pieces of fat when forming the bale, so that the resulting product is sufficiently juicy and crispy. Gyros in Greece is usually prepared from pork. In other countries, chicken, lamb and veal gyros are served. Gyro meat is seasoned with a spice mix, which usually includes s alt, sweet and hot peppers, white and black pepper, parsley, garlic and Greek oregano (rigani). Some mixes include cinnamon, a scoopnutmeg, cumin, anise, fennel, coriander, allspice and sumac.
Gyros is prepared in two versions - take-away and restaurant. Gyros to go is served in a drink - a flat, round, wheat cake that swells during baking, creating a natural pocket for stuffing. Traditional meat accompaniments include tomatoes, onions and a 10% fat yogurt tzatziki sauce and grated fresh cucumbers. In the restaurant version, the plate includes meat served with french fries and a village salad ("choriatiki salata"), which is called Greek salad outside of Greece. The whole thing can be accompanied by pita, which is more toasted and crunchy than the take-out one, as it does not have to be so flexible.

Worth knowingGreek gyros and Turkish doner kebap are two identical dishes. Probably the gyro comes from the Turkish version. The main difference between them is that traditional kebap is never made of pork. It can also be served with additives other than gyros.
