In addition, they contain vitamin A in the form of carotene (chanterelles have the most - that's why they are orange), as well as significant amounts of vitamins B1 and B2. The remaining vitamins, including C, are found in trace amounts. Mushrooms are also a source of protein (intermediate between animal and vegetable proteins).

Remember to pick only he althy, shapely, for which we are absolutely sure. If we buy mushrooms at a market, by the road or in a store, choose firm ones, with a full hat, always with a stem. It is very important to check all the dishes carefully before preparing them.

One stray poisonous mushroom or even its leg is enough, and the misfortune is ready. Therefore, at each stage of preparing mushrooms for food, someone who really knows them should watch over them. If we don't have anyone like that and we don't know much ourselves, better, following the example of other nations, buy mushrooms or oyster mushrooms.

The basic rule of mushroom pickers - do not pick mushrooms into a plastic bag. It should be a basket or a basket. Remember not to destroy the litter and mycelium - cut off the bottom part of the leg with a knife or gently twist the root. This is very important. Fresh harvest must be prepared quickly and preferably eaten immediately. If the mushrooms have to wait until the morning, store them in the refrigerator, in an open container, preferably a glass bowl, so that they breathe. We peel them dry, before washing and before cutting, because it is much more difficult to check when washed and cut. We reject all old, wormy, incomplete.
