Sex addiction is an addiction just like any other. Every addiction is treated similarly, and similar forms of therapy are used. I think that castration will not be a good solution for you. You need professional help, e.g. a sexologist or addiction therapist, or I recommend Sexaholics Anonymous support groups. Addiction is a disease of the soul and mind - there is room for improvement here. Castration will not change anything, because you will not change your disturbed way of thinking or reacting. I believe that your wife should also receive psychological help, as she is exposed to Codependency.
From what I understood from your letter, your wife knows about your numerous betrayals, so in some way she gives her consent and agrees to such treatment - if only for this reason she needs help and a conversation with a specialist. Working on your problem is primarily working on the skillful naming of feelings, recognizing and expressing them in the most constructive and he althy way. Of course, the therapy covers other areas and during the therapy you will work on them, so that in your future he althy life you will enjoy not only sex, but also the positive and sincere emotions experienced with it.
